The Gluten-Free Resource Education Awareness Training (GREAT) program of the National Foundation for Celiac Awareness (NFCA) will provide you with skills needed for offering gluten-free foods. This is your opportunity to offer a much needed service and participate in the expanding gluten-free market. Implementing standardized gluten-free protocols contributes to development of a loyal and growing customer base. Evidence of certification gives your customers an additional level of comfort in frequenting your establishment, and provides new avenues for publicizing your restaurant. As a GREAT Guide based in Manhattan, I'll help you through the process.
